Traditionally made by hand with a smooth-tipped knife or with the exclusive use of the index finger. Our production maintains a traditional approach making use of a skilful rolling and forming by means of bronze dies that leave the surface of each cavatello rough and the concave part welcoming.
Tradition sees them prepared with legumes or mussels, with cherry tomatoes and capers or with a sauce of fresh tomatoes and basil, but it is a versatile format open to any experimentation.
The slow drying process of the cavatelli allows to maintain the quality characteristics of the 100% Apulian "Senatore Cappelli" semolina unaltered.
